Banana pancakes

The perfect weekend breakfast. Plus, a great way to use up overripe bananas. I love mine with berries, bacon and maple syrup – but if you want to treat yourself a little more, try it with some clotted cream.

Banana pancakes (For 2)

  • 2 bananas
  • 2 medium eggs
  • 1/2 cup of plain flour
  • 1/2 teaspoon baking powder
  • 1 heaped tablespoon caster sugar
  • 50 ml milk
  • A few drops of vanilla essence (optional)
  • A pinch of salt
  • Butter

Method

  1. Mash the bananas up in a bowl with the back of a fork. Stir in the eggs, milk and vanilla essence.
  2. Add the flour, baking powder, sugar and salt and mix till combined.
  3. In a pan over a medium heat, add a a little bit of butter.
  4. Spoon the pancake batter in. The pancakes will be ready to be flipped once little bubbles appear and it looks firm (couple of minutes). Cook on the other side for a couple more minutes.
  5. Eat hot with your favourite toppings.
