The perfect weekend breakfast. Plus, a great way to use up overripe bananas. I love mine with berries, bacon and maple syrup – but if you want to treat yourself a little more, try it with some clotted cream.
Banana pancakes (For 2)
- 2 bananas
- 2 medium eggs
- 1/2 cup of plain flour
- 1/2 teaspoon baking powder
- 1 heaped tablespoon caster sugar
- 50 ml milk
- A few drops of vanilla essence (optional)
- A pinch of salt
- Butter
Method
- Mash the bananas up in a bowl with the back of a fork. Stir in the eggs, milk and vanilla essence.
- Add the flour, baking powder, sugar and salt and mix till combined.
- In a pan over a medium heat, add a a little bit of butter.
- Spoon the pancake batter in. The pancakes will be ready to be flipped once little bubbles appear and it looks firm (couple of minutes). Cook on the other side for a couple more minutes.
- Eat hot with your favourite toppings.
