Lamb chops with honey and feta

This a really quick and simple summer dinner – and it take no time to cook. Just make sure to use really good quality lamb, feta and honey. And all this needs is a simple leafy salad, and some good wine, on the side.

Lamb chops with honey and feta (For 2)

  • 6-8 lamb chops
  • 100 grams of feta cheese
  • Olive oil
  • 1/2 teaspoon of dried oregano
  • 1/2 teaspoon of dried thyme
  • Juice of 1/2 a lemon
  • 3-4 teaspoons of honey, for drizzling
  • Salt and pepper

Method

  1. Put the lamb chops in a bowl, together with a little olive oil, dried herbs, salt and pepper. Let it marinade for an hour or two.
  2. Heat a frying or grill pan till hot. Fry the lamb chops for 2-4 minutes each side, depending on their thickness and how you like it cooked. If you have a layer of fat on the side of your chops, turn the chops on their sides and fry the fat for a few minutes till its gold brown.
  3. When the chops are done, arrange them on a plate. Squeeze over some lemon juice and crumble the feta on top. Drizzle over the honey and eat while hot.
