Oven baked spicy barbecue ribs

It’s really surprising how effortless these fall-off-the-bone spare ribs are to make. All you need is a little time (and good quality ribs) – but I can’t stress enough how worth it this dish is. Once you try it and realise that the meat literally melts in your mouth, you won’t go back to making ribs any other way. I promise!

Oven baked spicy barbecue ribs (For 2)

  • 1 kilo of good quality spare ribs
  • 1 teaspoon cumin powder
  • 1 teaspoon smoked paprika
  • A large pinch of chilli flakes
  • 1/2 a small red onion, finely chopped
  • 3 heaped tablespoons of ketchup
  • 1 tablespoon of chilli sauce (or less if you don’t want it as spicy)
  • 1 teaspoon of brown sugar
  • A couple of dashes of Worcestershire sauce
  • 1 tablespoon of apple cider vinegar
  • Salt and pepper
  • A little oil for frying

Method

  1. Preheat the oven to around 140/150C. Mix the cumin and smoked paprika powders together with the chilli flakes.
  2. Season both sides of the ribs with salt and pepper, and coat both sides with the spice mixture. Pat the powder in gently with your hand.
  3. Place your ribs on a large piece of foil and wrap it up tightly. Put this in the oven and let it bake for around 3-3.5 hours.
  4. In the meantime, make the spicy barbecue sauce. Heat some oil in a pan and add the onions. Cook for around 5-7 minutes, till they start to soften. Next, add the ketchup, chilli sauce, brown sugar, Worcestershire sauce and apple cider vinegar and mix well. Turn the heat down low and let this cook for a few minutes. The sauce should be thick and spreadable. Taste it and adjust for salt/sugar/chilli.
  5. When the ribs are cooked, open up the foil and spread it on the baking tray. Using a brush, spread a thick layer of the sauce over the ribs.
  6. Switch the oven onto grill mode and turn it up to the highest setting. Put the ribs back in the oven, on the top shelf, and grill for around 4-5 minutes. You want a little bit of char, but keep an eye on the sauce to make sure it doesn’t burn.
  7. Take the ribs out, slice them up and enjoy with coleslaw, fries and a cold beer.
