Whipped lemony feta dip

This tangy and creamy dip takes no time to make and requires just a handful of ingredients. Its perfect for summer dining with crunchy raw vegetables and crusty bread, but its also pretty good slathered on a burger.

Whipped lemony feta dip (For 4)

  • 200 grams (1 block) of feta cheese
  • 100 to 150 grams (or 1/2 to 3/4 cup) of Greek yogurt, depending on how thick you want it (less yogurt for a thicker consistency)
  • 1 large clove of garlic, crushed
  • Juice and zest of 1/2 a large lemon
  • 2-3 tablespoons of olive oil
  • Salt and pepper for seasoning
  • Fresh herbs such as dill or mint, to garnish
  • 1/2 teaspoon of sumac, to garnish

Method

  1. Put the cheese and yogurt in a bowl and whisk until the cheese is completely broken down and the dip is smooth and creamy. You can also do this in a food processor if you prefer.
  2. Add the garlic, olive oil and lemon zest and juice, and mix well to combine. Season to taste with salt and pepper.
  3. Garnish with herbs and sumac, and little more olive oil. Serve with crunchy raw vegetables and crusty bread.
