Guacamole

When you realise how quick and easy it is to whip up a bowl of fresh guac, you’ll stop buying it ready made from the store. And trust me, nothing beats the taste. Make it as smooth or as chunky as you like by simply mashing up more or less of the avocados.

Guacamole (For 2-3)

  • 1 large ripe avocado
  • 1 tomato, chopped
  • 1/2 a red onion, chopped
  • 1 garlic clove, finely chopped
  • 1/2 a chilli, finely chopped (remove the seeds for less heat)
  • 1/2 a lime
  • A handful of coriander leaves, chopped
  • Sea salt to taste

Method

  1. Slice the avocado in half and remove the seed and the flesh. Roughly chop it up. Using the back of a fork, I mash around half of the flesh and leave the remaining in chunks – if you want it smoother, mash up a bit more.
  2. Add the remaining chopped ingredients and mix well. Season to taste with the salt and the lime juice.
