Spicy granola crusted chicken

I looove granola – so much so that I decided to make it part of dinner and not just breakfast anymore! Granola gives the chicken a super crunchy and delicious taste – and a small portion is really filling. I usually make little bit sized pieces as a snack, but you can leave the chicken breast whole and follow the same recipe for a nicer looking dinner.

Spicy granola crusted chicken (For 2)

  • 2 chicken breasts (cut into pieces or left whole)
  • 1 egg, beaten
  • 1/2 cup of plain flour
  • 1 cup of granola
  • 1 heaped teaspoon smoked paprika
  • 1/2 teaspoon chilli flakes or chilli powder (or more if you like it spicier)
  • 1/2 teaspoon dried oregano
  • Salt and pepper
  • Oil for frying

Method

  1. Crush the granola clusters using a pestle and mortar (or a blender), until its almost powdery. Spread this onto a plate.
  2. In another plate, add the flour, smoked paprika, chilli and oregano and mix well. Place the beaten egg into another shallow dish.
  3. Heat oil in a frying pan over a medium to high heat.
  4. Season the chicken generously with salt and pepper.
  5. Dip the chicken in the flour mixture and shake off any excess. Then dip into the egg, and finally dip into the granola.
  6. Fry the chicken in the hot oil until golden, crisp and cook through – this should take a few minutes for each side. You can check if its cooked by cutting a fat piece to make sure the flesh is fully white.
  7. Drain the chicken on kitchen paper. Serve while still hot with lots of sriracha.
